Granny Frances’ Taco Soup

But I saw a dear friend recently (whom my boys lovingly refer to as “Granny Frances”) and she made the most delicious soup for us. So I just had to try it.
I didn’t write the exact recipe down, but this is fairly close.
You will need ground beef, onions, ranch style beans, stewed tomatoes, corn, black beans, rotel, chicken broth, a package of taco seasoning, and a package of ranch dressing mix.

First, you brown the ground beef and chopped onions, along with a package of taco seasoning.

Drain the grease, and start dumping in the beans, corn, rotel, stewed tomatoes, etc. I didn’t have any ranch dressing mix, so I decided to leave it out and see how it turned out without it. Also, I ended up not using the black beans because the pot was getting full!

I had some a fresh tomatoe that I needed to use, so I chopped it up and dumped it in.

Hmmm, it needs liquid. Let’s dump in some chicken broth.

I tasted it at this point, and determined that it needed another package of taco seasoning.

It’s good, but seems to need more tomatoe type something, so I added a can of tomatoe soup.

It tasted really good at this point. But Hubby called on his way home from work and asked if I needed anything from the store. One package of ranch dressing, coming up. Here is a picture of the finished concoction. The ranch dressing mix did add that final zing that seemed to be missing, so don’t leave it out!
